Serve warm and enjoy! Empanada Pie (South America Chicken Pot Pie)   Makes 4   Give a flavorful twist to a traditional pot pie with flaky pastry and scrumptious filling in this dish! For the Pastry: 2 cups of all-purpose flour 3/4 tsp salt 8 tablespoons margarine or butter, divided 2 tablespoons shortening or lard 1/3 cup cold water     For filling: 1/2 cup pitted and sliced green olives 1 cup sliced onion 1 cup sliced green pepper 1 optional hot green chili, sliced 1 cup sliced tomatoes 1 cup raisins 1/4 cup cider vinegar 1 teaspoon tomato paste 1/8 teaspoon ground cinnamon 1 teaspoon salt 1 cup diced cooked chicken 1 beaten egg     Instructions: Combine salt and flour in a bowl. Cut in 6 tablespoons of lard and butter and mix to a crumby mixture. Add water and stir to form a dough. Chill in the refrigerator when not in use. Preheat oven to 425°F. Roll out 2/3 pastry and press in a 9-inch pie plate, then prick with a fork for venting. Roll out the top pastry for the top crust. Fancy Chicken Puff Pie (Rich & Creamy Delight)   Servings: 4 Open-faced pastry with chicken breast, ham, and asparagus—a dish, usually eaten on one special day—is one of my favorites.   1/4 cup minced scallions or shallots 1/4 cup flour 1 cup chicken broth 1/4 cup sherry Salt and white pepper, to taste A dash of nutmeg 1/4 pound thin slices of ham 3 cups thin chicken and ham slices 1 1/2 cups thin slices of asparagus 1 cup thick cream 1 sheet puff pastry 1 beaten egg Instructions: Turn oven to 425°F. In a frying pan, melt butter and sauté minced scallions. Add in flour and stir for 3 minutes Slow stir in sherry and broth. Bring to a boil, stirring. Add in pepper, salt, and nutmeg.
