Simple Chicken Sandwiches, Salads & Tetrazzini for Any Moment!

Chicken-Bacon Sandwich

Makes 6

Do your sandwiches become repetitive? Spice them with alternative bread for a flavorful and exciting meal! Serve them closed, or make them open for your kids to insert any ingredients of your preference!

Ingredients:

  • 1 cup shredded chicken
  • 1/4 cup shredded celery
  • 2 tablespoons shredded parsley
  • 4 tablespoons of mayonnaise or salad dressing
  • 2 teaspoons lemon juice
  • 1/4 teaspoon salt (to your taste)
  • 1/8 teaspoon pepper
  • 6 crispy, cooked bacon slices

 

 

How to make it:

  1. Combine all ingredients (with no bacon) in a mixing bowl.
  2. Spread it over your preferred bread.
  3. Cut it in two, have bacon slices over it, and serve!

Hot Chicken Sandwich

 

Serves 6

Need a quick and flavorful meal? Have a warm sandwich such as this one. In a rush? Skip canned soup and use chicken broth to whip up a speedy white sauce for added flavor.

In a real rush? Canned soup works, too!

Ingredients:

  • 6 slices of hot, buttered toast
  • 1 can (3.5 oz) deviled ham
  • 1 chicken, cooked and sliced
  • 3 tablespoons parsley, chopped
  • 1 can (10.5 oz) hot cream of chicken soup
  • Salt (since soup and ham can already be salty!)

 

 

How to make it:

  1. Butter toast and cover with deviled ham.
  2. Sprinkle parsley over it.
  3. Put chicken slices over toast.
  4. Ladle hot soup over each and serve at once!

Quick Chicken Tetrazzini

 

Serves 2-3

For an even yummier meal, have patience and have it a little later when its ingredients meld in a tasty sauce. Serve with tomato and green beans, cooked, for a healthy meal.

 

In a rush?

Skip the white sauce with chicken and mushroom and use canned soup!

What you will have in your cupboard and fridge:

  • 1 cup chicken, in small chunks
  • 1 can (10.5 oz) cream of mushroom soup, not mixed with water
  • 1/2 cup spaghetti (you can use 1/4 cup dried spaghetti!)
  • 2 tablespoons sherry
  • 1/3 cup Parmesan cheese, grated
  • Salt and pepper (you can omit it if the soup is salty)

 

How to make it:

1. Heat oven to 375°F.

2. Combine all ingredients in a baking dish.

3. Bake in the oven for 30 minutes, and serve hot and lightly browned!

Chicken Spring Salad

Serves: 6-8

A healthy spring salad is rich in vitamins and minerals!

  • 3 cups chicken, in chunks
  • 1 package (10 oz) raw spinach, drained, stems removed and torn
  • 1 small clove of garlic, minced
  • 1 teaspoon chives, minced, frozen or fresh
  • 1 teaspoon salt (to your taste)
  • 1/8 teaspoon ground pepper
  • 1 teaspoon sugar
  • 3/4 cup chopped pecans
  • 2 chopped apples
  • 1/2 cup oil
  • 1/4 cup red wine vinegar

 

How to make it:

  1. Combine all ingredients in a big salad bowl.
  2. Lightly mix and serve fresh!

French Dressing Chicken Salad

 

Serves: 3-4

Hungry and in a rush?

Quick salad with a tasty bite. Add a little cayenne pepper for a little zing!

  • 2 cups chicken, diced, and cooked
  • 1/2 cup celery, minced
  • 1/4 cup French dressing
  • 1/4 cup salad dressing, or mayonnaise
  • 1/8 teaspoon cayenne pepper

 

How to make it:

  1. Combine ingredients in a salad bowl.
  2. Serve over a bed of lettuce and enjoy!
