Chicken Tamale Pie (Mexican Comfort Dish)

 

Servings: 8-10

 

Keep stirring the lumpy dough, which will eventually become thick and smooth.

Ingredients:

  • 4 tablespoons margarine or butter, divided
  • 1 onion, chopped
  • 1 minced garlic
  • 2 cups chicken, cooked and cubed
  • 1 can (12 oz) tomato puree
  • 1 tsp chili powder
  • 1 cup pitted and chopped ripe olives
  • 1 tsp ground coriander seed
  • 3 tsp salt, divided
  • 1 tsp ground pepper
  • 6 cups chicken broth, divided
  • 2 cups of cornmeal

 

 

Instructions:

  1. Heat 1 tsp of butter in a large skillet over medium heat.
  2. Add the onion and garlic, and sauté for 1 minute.
  3. Mix the chicken with tomato puree, chili powder, olives, coriander, 1 tsp salt, pepper, and 1/2 cup chicken broth in a large bowl.
  4. Cover and simmer for 15 minutes at a low heat.
  5. Heat oven to 325°F. The rest of the broth is boiled in a saucepan.
  6. Add salt and butter, and then mix in the cornmeal.
  7. Bake for 1 1/2 hours.
  8. Serve warm and enjoy!

Empanada Pie (South America Chicken Pot Pie)

 

Makes 4

 

Give a flavorful twist to a traditional pot pie with flaky pastry and scrumptious filling in this dish!

For the Pastry:

  • 2 cups of all-purpose flour
  • 3/4 tsp salt
  • 8 tablespoons margarine or butter, divided
  • 2 tablespoons shortening or lard
  • 1/3 cup cold water

 

 

For filling:

  • 1/2 cup pitted and sliced green olives
  • 1 cup sliced onion
  • 1 cup sliced green pepper
  • 1 optional hot green chili, sliced
  • 1 cup sliced tomatoes
  • 1 cup raisins
  • 1/4 cup cider vinegar
  • 1 teaspoon tomato paste
  • 1/8 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 cup diced cooked chicken
  • 1 beaten egg

 

 

Instructions:

  1. Combine salt and flour in a bowl.
  2. Cut in 6 tablespoons of lard and butter and mix to a crumby mixture.
  3. Add water and stir to form a dough.
  4. Chill in the refrigerator when not in use.
  5. Preheat oven to 425°F.
  6. Roll out 2/3 pastry and press in a 9-inch pie plate, then prick with a fork for venting.
  7. Roll out the top pastry for the top crust.
  8. Melt 2 tablespoons butter in a frying pan and fry onion and pepper for 3 minutes or until tender.
  9. Add the olives, raisins, vinegar, tomatoes, and tomato paste, and stir for 5 minutes.
  10. Add salt and cinnamon, then stir in chicken.
  11. Fill with filling and cover with top crust.
  12. Seal the edge and make a decorative edge with a knife, then brush with egg for glaze.
  13. Bake in the oven for 30 minutes, until golden brown.

Fancy Chicken Puff Pie (Rich & Creamy Delight)

 

Servings: 4

Open-faced pastry with chicken breast, ham, and asparagus—a dish, usually eaten on one special day—is one of my favorites.

 

  • 1/4 cup minced scallions or shallots
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1/4 cup sherry
  • Salt and white pepper, to taste
  • A dash of nutmeg
  • 1/4 pound thin slices of ham
  • 3 cups thin chicken and ham slices
  • 1 1/2 cups thin slices of asparagus
  • 1 cup thick cream
  • 1 sheet puff pastry
  • 1 beaten egg

Instructions:

  1. Turn oven to 425°F.
  2. In a frying pan, melt butter and sauté minced scallions.
  3. Add in flour and stir for 3 minutes
  4. Slow stir in sherry and broth.
  5. Bring to a boil, stirring.
  6. Add in pepper, salt, and nutmeg.
  7. Simmer for 5 minutes
  8. Stir in chicken, ham, asparagus, and cream.
  9. Put the mixture in a 9-inch pie dish
  10. Roll out the puff pastry and cover mixture.
  11. Brush with egg and make pastry decorative slits
  12. Bake at 425°F for 10 minutes, then 350°F for 10-15 minutes, or till a golden brown

Chicken à la King with Buttermilk Biscuits (Classic Comfort Dish)

Rich, full, and a family staple, this dish is best over homemade or store-purchased buttermilk biscuits.

Servings: 3-4

  • 2 cups chicken, in chunks
  • 1/8 teaspoon ground pepper
  • 1/2 cup pimento, in chunks
  • 1/4 pound fresh mushrooms, sliced
  • Two cans of cream of chicken soup (10.5 ounces each).
  • Combine these ingredients in a saucepan over low heat and simmer for 20 minutes and warm them through
  • Serve over warm biscuits

Buttermilk Biscuits

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cup shortening or butter
  • 3/4 cup buttermilk
  1. Turn oven to 425°F.
  2. Combine together flour, salt, baking powder, and baking soda.
  3. Cut in shortening and mix till it is crumby.
  4. Stir in buttermilk till a dough forms.
  5. Roll out dough and cut out 2-inch rounds
  6. Bake 15-20 minutes till a golden brown

Chicken and Corn Soup (Light and Comforting)

 

Not much, but it is a simple meal you enjoy on a cold day.

 

Servings: 2-3

  • 3 cups chicken broth
  • 1 1/2 cups cooked chicken, in chunks
  • 1 can (8 3/4 oz) cream-style corn
  • 1 tablespoon dry sherry
  • Salt and pepper to taste
  • 1 1/2 tablespoons and 3 tablespoons mixed together with cornstarch
  • 1 cup watercress leaves
  1. Put these ingredients in a pot and warm chicken broth over a low flame.
  2. Throw in chicken, sherry, salt, and pepper, cover, and let simmer for 2-3 minutes.
  3. Combine water and cornstarch, then add to pot and simmer for 1-2 minutes and thicken a little.
  4. Add watercress and serve hot.
