Homemade Chicken Chow Mein Recipe (Plus Other Must-Try Dishes!)

Chinese Style Chicken Chow Mein

Quick and Simple Chicken Chow Mein utilizes cream of mushroom soup, and therefore, it is a quick and flavorful meal. For a lighter meal, use homemade white sauce in its stead. Remember, darker soy sauce is sweeter in flavor, for it contains added molasses or caramel, and lighter soy sauce is saltier in flavor.

Ingredients:

  • 1 ½ cups chicken, in chunks
  • 1 can (3 oz) chow mein, in two parts
  • 1 can (6 ½ oz) cashew, in two parts
  • 1 can (10 ½ oz) cream of mushroom soup (do not use water with it)
  • ½ cup chicken broth
  • 2 tablespoons soy sauce

 

 

Steps:

  1. To start, have your oven at 350°F and warm it first.
  2. Combine chicken, half of chow mein, half of cashews, soup, broth, and soy sauce in a baking dish and mix them together.
  3. Now, cover with chow mein and cashews, and then bake for 30 minutes, and when warm and crunchy at the top, serve!

Chicken-in-Every-Pot Soup

Servings: 4-6

 

Use new ingredients for best soup. Modify them according to whatever is in season. To choose a new carrot, inspect its crown (the part at the base of the carrot, near stems). If its crown is orange and polished, it is new; and when its crown is dark brown and black, it is older!

Ingredients:

  • 1 cup potatoes, in ½-inch cubes
  • 4 cups chicken soup
  • ¼ cup sherry
  • 1 teaspoon salt (to your preference)
  • ⅛ teaspoon ground pepper
  • 1 cup onions, in halves and thin strips
  • 1 cup carrots, in ¼-by-2-by-1-inch pieces
  • 1 cup celery, in ¼-by-2-by-1-by-1-inch pieces
  • 1 cup green beans, frozen or new, in 2-by-1-by-1-by-1-inch pieces
  • 2 cups chicken, in thin pieces, when cooked
  • 1 cup zucchini, in ¼-by-2-by-1-by-1-inch pieces

Directions:

  1. Put the potatoes in a pot of salted water and boil them for 5 minutes. Remove the water and transfer the potatoes to a cold water bowl in order to stop cooking and save them for future use.
  2. Boil sherry and broth together in a big pot and cook them high and quick.
  3. Include salt and pepper, then celery, onions, and carrots.
  4. Boil over low temperature for 5 minutes.
  5. Include chicken and green beans, boil for 1 minute, then boil over low temperature for 1 minute, and serve warm.

Alternative: Chicken Minestrone

Combine 1 cup of stewed tomatoes, 2 cups of cooked fusilli or any kind of pasta, and ½ cup of kidney beans, cooked, when adding zucchini and potatoes.

Include ½ cup of Parmesan cheese, grated, when serving (omit for a meal with less cholesterol).

Other new, uncooked, fresh vegetables can be added according to how long they require cooking.

New England Chicken & Corn Chowder

Makes 4 to 6

The name “chowder” comes from a French name for a large soup pot, “chaudière.” Fresh corn can be added to this, but frozen corn is sweeter because it is frozen immediately after harvesting. Fresh corn can stand for days before arriving in your kitchen.

Ingredients:

  • ¼ pound salt pork or bacon, in ½-by-½-by-½-by cubes
  • 1 cup onion, in chunks
  • ½ cup celery, in chunks
  • 4 cups chicken broth
  • 2 cups potatoes, peeled, in ½-by-½-by-½-by cubes
  • 1 10-ounce bag of frozen corn, or 2 ears of fresh corn, with removed kernels
  • 1 teaspoon salt (to your preference)
  • ⅛ teaspoon ground pepper
  • 2 cups chicken, in ½-by-½-by-½-by cubes
  • 1 ½ pints (1 cup) of heavy cream
  • For garnish: oyster crackers

 

Directions:

  1. In a large pot, fry bacon over high heat for 3 minutes when fat comes out.
  2. Stir in celery and onion and fry for 3 minutes.
  3. Boil in chicken broth for 5-10 minutes with potatoes, corn, salt, and pepper, and stop when tender.
  4. Boil for 3 additional minutes with chicken and cream, and serve over warm crackers for oysters.
  5. Seafood variation: Shellfish Chowder
  6. Stir in 1 cup of chopped green pepper and 1 cup of shrimp or crab with chicken for a new and tasty meal.
